Farmer’s SPring Salad

A twist on traditional garden salad that you will never get tired of. In this recipe, I used red leaf lettuce and freshly grown dandelion greens straight from the farmer’s market. Dandelion greens are a vital part of a healthy diet. Known for their bitter taste, they are an incredible leafy green for live cleansing. A combination of purple and orange carrots, sliced raw to help with hormone balance and estrogen clearance. A perfect lunch for anyone and everyone!

Salad Recipe:

  • Red leaf lettuce

  • Dandelion greens

  • Purple and orange carrots sliced

  • Raw pumpkin seeds (no oils, just salt added)

  • Feta cheese

Dressing:

  • Apple cider vinegar or my homemade jalapeño honey cider

  • Olive oil

  • Raw local honey

  • Dijon mustard

  • fresh squeezed lemon juice

  • Salt and pepper
